Ingredients:

  • 4 medium-sized sweet potatoes
  • 1 cup frozen peas
  • 1 ripe avocado
  • 1 small red onion, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh cilantro or parsley, for garnish (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and prick them with a fork all over. Place them on a baking sheet and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
  2. While the sweet potatoes are baking, prepare the stuffing. In a medium saucepan, bring water to a boil and cook the frozen peas according to the package instructions. Drain and set aside.
  3. Cut the avocado in half, remove the pit, and scoop out the flesh into a mixing bowl. Mash the avocado with a fork until it becomes creamy.
  4. In a separate pan, heat the olive oil over medium heat. Add the chopped red onion and minced garlic, and sauté for about 3-4 minutes until the onion becomes translucent and fragrant. Remove from heat and let it cool slightly.
  5. Add the sautéed onion and garlic mixture to the mashed avocado. Stir in the cooked peas, lemon juice, salt, and pepper. Mix everything well until all the ingredients are combined.
  6. Once the sweet potatoes are cooked and cool enough to handle, make a lengthwise cut along the top of each potato, creating a deep pocket.
  7. Stuff each sweet potato with the avocado and pea mixture, using a spoon to gently press it down into the pockets. Fill them generously, but be careful not to overstuff.
  8. Place the stuffed sweet potatoes back onto the baking sheet and return them to the oven for an additional 10-15 minutes to warm through and allow the flavors to meld.
  9. Once the sweet potatoes are heated, remove them from the oven. Garnish with fresh cilantro or parsley if desired.
  10. Serve the sweet potatoes stuffed with peas and avocado while they’re still warm. Enjoy!
